Would it be wise to replace all of the gate valves with ball valves in a house?
Most older houses have gate valves (the old style where you twist several times to open and close) rather than the newer ball valves that turn water on and off in a quarter turn. Gate valves lose their ability to cut off water supply completely, they leak, and even when fully open they have a water flow loss. Ball valves solve all of these problems, making gate valves obsolete.
In my opinion, it would be the plumbing equivalent of changing electric fuse boxes to circuit breaker panels.
